MEXICAN SPATCHCOCK

INGREDIENTS

2 whole Game Farm Spatchcock
Butterfly or deboned
1 teaspoon chilli powder
½ teaspoon dried oregano
1/8 teaspoon ground cinnamon
1 clove garlic, crushed
2 tablespoons lemon juice

Salsa
chargrilled corn kernels
1 tomato, diced
1 small red onion, sliced
1 red chilli, finely chopped
coriander leaves
lime juice

To serve
Tortilla, guacamole, shredded lettuce

METHOD

Combine the spices, garlic and lemon juice and brush generously over the spatchcock. Heat a grillpan or frypan over medium heat and cook the spatchcock for five to eight minutes on each side or until cooked through. Combine salsa ingredients. Serve the spatchcock with salsa, tortilla, lettuce and guacamole.
